I've been using .50 cal ammo cans for storage for about 30 years. Some of my ammo is also about 30 years old and the boxes still look like new.
I had a few cans that I probably hadn't opened for a few years and found that the rubber seal would stick on the can from the tight fit. About once a year I put a drop of silicone on my fingertip and treat the rubber seals on all the cans. This seemed to have resolved the sticking problem without jeopardizing the air tight seal.
I use to have boxes of bulk target ammo which I also store in can. Although I wasn't worried about leakage in the cans, I use a Seal a Meal vac unit and pack 50 - 100 rounds in each pack. It just makes it easier knowing how many rounds I'm taking to the range.
I store shotshell's in plastic storage containers. It's convienent and heavy but not water or air proof. If anyone has a better but economical shotshell storage idea, please let me know.
